[Mrs.] Bill's Focaccia Bread II

I have received so many emails about this recipe, I thought I should update it. And, for the record, it is "Mrs. Bill" (that's me - Glenda) who created the recipe. I think it got misnamed because his name is on the email address. As I have written to many of you, he wouldn't have the first idea of how to start the machine, although he is wonderful at keeping my computer working:-)

Anyway, I hope you enjoy it, and feel free to email me - I love to hear how everyone is having fun with their bread machines!

    • 1 1/2 teaspoons salt

    • 1 1/2 cups water

    • 3 Tablespoons olive oil

    • 1 large egg, lightly beaten (optional)

    • 4 cups white flour (bread flour if you have low gluten flour)

    • 3 Tablespoons sugar

    • 2 Tablespoons instant skim milk powder

    • 2 teaspoons yeast

Put ingredients in machine in order above. Set to "dough" setting.

When it is ready, cut the dough in half, spread into circles on baking sheets or pizza pans. Brush lightly with olive oil. Sprinkle on: garlic powder, onion powder, parsley flakes, basil, rosemary, feta or parmesan cheese (or both!) and a little coarse salt. Bake in an oven preheated to 450 F. for 10 -- 12 minutes.

Enjoy with soup, cheese or Italian style with balsamic vinegar and olive oil (equal parts) swirled in a saucer.

*Note - you can let the shaped dough rise for 10 - 15 minutes if you like a light textured bread or bake it right away for a chewy texture. The lighter bread is better at soaking up soups or gravies. If you decide to let it rise, put the salt on just before it goes into the oven.

*Note 2 - you can put 1/2 of the spices into the bread machine with the dough. Just don't use more than about a teaspoon of garlic powder since it can cause the yeast to become inactive.

*Note 3 - you can substitute up to 1/2 of the flour with whole wheat flour. Add a bit more yeast - 1/4 teaspoon.

*Note 4 - you can use this as a pizza crust either with or without the spices in the dough.
