Gooey Pumpkin Bread

Step One:

    • 1 Cup Sugar
    • 1 Cup Oil
    • 4 Eggs (Add one at a time)
Beat for 5 minutes.

Step Two: Sift together

    • 3 and 1 half Cups Flour
    • 1 Tsp Cinnamon
    • 1 Tsp Nutmeg
    • 1 Tsp Salt
    • 2 Tsp Baking Soda

Step Three: Combine

    • 2 Cups Pumpkin
    • 3/4 Cup Water

Add Step 2 (Dry Ingredients) alternating with Step 3 (Pumpkin) to Step 1 (Liquid)

Grease and flour bread pan

Bake at 350 for 45 minutes

Makes four or more loaves depending on bread pan size, great for gift giving. Also makes good muffins as well, can be refrigerated one day. "Caution" Rises a good deal. Only fill pans about halfway or so.

Recipe was given to me by a friend who grew up in Eastern Kentucky.
