Lemon Bread
Yield One Loaf

Ingredients

    1 c. sugar 5 tbsp. butter 2 eggs 1 grated lemon rind 1/2 c. milk 1/2 tsp. salt 1-1/2 c. flour 1 tsp. baking powder (option) 1/2 c. nuts (finely chopped)

Blend butter and sugar until creamy. Beat in eggs. Add milk and mix well. Sift dry ingredients together, add to batter and beat until smooth. Add one grated lemon rind and nuts. Place in a greased 4x8 pan at 350 degrees for about one hour.

While the bread is baking mix the lemon juice and sugar for glaze. Make sure sugar is completely dissolved. Spoon glaze over HOT bread before removing from pan. Continually reapply glaze until glaze is completely absorbed.
