still moist and chewy the next day bread

In bread bowl, stir together:

    • 1 c. whole wheat flour
    • 1 c. bread flour
    • 1 T. instant yeast
    • 1 T. salt
    • 1/3 c. sugar

Add :

    • 3 cups very warm water
    • 1/2c. olive oil (no substitutes)

Stir and continue to add bread flour until sticky dough forms. Turn out on floured surface and knead until smooth and elastic. Place in lightly oiled bowl, turn over, cover and let rise in warm place until double. Shape into 3 loaves. Let rise about 30 - 45 minutes in greased bread pans. Bake at 375 degrees for 30 minutes.

A few other things to do with this dough:

  • Rolls: Shape into rolls and bake in a 400 degree oven until golden brown, about 20 min.
  • Cinnamon Bread: Roll one of the thirds of dough into a rectangle. Spread on soft butter, sprinkle on brown sugar and cinnamon. Roll up, pinch shut, bake as directed.
  • Sandwich Wraps: Divide one of the thirds of dough into 4-6 pieces. Roll each piece into a flat, thin circle. Heat in a lightly greased skillet, turning once, until spotted and cooked through. Fill with cooked chicken, lettuce, tomato, onion, ranch dressing, or fillings of choice.
