Really Nice Bread

Hi, I had followed many Bread Recipe's, and went through three machines doing a little change here and there but for some reason never really found a recipe that made bread similar to a really nice loaf, like those made by a pro-baker until I found a recipe that didn't change much except it didn't contain sugar.....

I'll repeat it here, and not try to take credit for it but offer it for others to try with my slight modifications.
  •         5 cups     of all purpose flour.
  •         2 tsp.       salt.
  •         1-3/4        cups of water.
  •         2 tsp.       olive oil.
  •         2 tsp.        fast acting yeast.

Prepare on dough setting, and put in oiled covered bowl in fridge for one hour.
 
Divide into two or four depending whether you want Vienna bread, or French Baguettes roll out into strips about 18 inches by 8 inches and roll length ways, pinch the ends, place on greased and cornmeal baking sheet, brush tops  with water, and leave to rise till doubled in size.
 
Glaze with either beaten egg yoke with two tsp. water bake at 375deg. F  for 25 to 30 mins.
